Cauliflower Gratin


  • 1 large head cauliflower, cut into large florets (7 cups)
  • 3 Tablespoons butter
  • 3 Tablespoons gluten-free flour
  • 2 cups 2% milk, at room temperature
  • salt and pepper
  • 3/4 cup freshly grated gruyere cheese, divided
  • 3/4 cup freshly grated parmesan cheese, divided

  1. Preheat oven to 375 degrees. Bring a large pot of salted water to a boil then add the cauliflower florets and boil until al dente (don’t over boil!) 3-4 minutes. Drain then set aside.
